Sometimes as pianists we get caught up with all the possible notes that we can play at once, so playing with 1 single hand allows us to explore beautiful moments of 2 voices. 1 Voice underneath the melody, harmonized the right way, is enough to convey the harmony. The harmony voice can be 3rd or 7ths but it doesn't always have to be. Sometimes that 2nd voice can be counterpoint, other times it can be a counter-melody.
