When playing a ballad, we have room to create motion into each chord. Rather than just playing blocks of chords, we can create a continuous flow of harmony.
In solo piano, since there is no drums and bass spelling out every beat for the listener, it's very important to bring out as many rhythmic subdivisions as possible. Rhythmically, the fun of a ballad is alternating between 16th note and triplet subdivisions.
